Creamy citrus salad dressing

I recently re-opened my "gourmet" raw cookbook, or should I say "uncook" book and found this very nice, light and delicious salad dressing recipe.

Ingrediants;
- 1 small ripe avocado
- 1 cup orange juice
- 1/4 cup plus 2 tbsp lime juice
- handful of cilantro
- 1 green onion, white plus 1 inch of green coarsely chopped
- 1 TBSP chopped shallot
- 1 tsp sea salt
- 1/2 cup extra virgin olive oil

Directions:
- place all ingrediants except olive oil in blender or food processor and blend until smooth and creamy. Slowly add the olive oil until dressing becomes creamy and emulsifies.

This recipe came alongside an easy salad - various greens and sunflower sprouts tossed in the dressing and than topped with coarsely chopped macadamia nuts that have been tossed in a bit of cold pressed macadamia oil and sea salt. It was a very refreshing and yummy salad and the dressing will go nicely with other salad mixes.
